Sustainable viticulture in Champagne
This former family of grower Champagne makers has been cultivating vines since 1692 in Ecueil, in the heart of Champagne between Reims and Epernay.
The trademark has evolved over the centuries and over the course of marriages. All these winegrowers have been Récoltants-Manipulants (RM) from their first vinified bottle, and the Champagne house has been managed by women for 80 years.
Elodie DESBORDES, 8th generation, succeeded her mother Marie-Christine in 1997 following higher studies in the marketing of wines and spirits.
Having studied the principles of biodynamics, natural and sown grassing has been practiced on the vineyard since 2003, and the use of products approved in organic farming are used. The soil is maintained by plowing by tractor and by horse.
The vineyard is made up of 33 plots planted between 1926 and 2013, the ripe age of these vines makes it possible to obtain grapes of exceptional quality.
The pressing "plot by plot" is done within the exploitation with two presses of 4000kg (1 traditional Coquard and 1 modern pneumatic Diemme).
The reserve wines are kept in large wooden vats of 72hL - 7200L.
Most of the Champagne Elodie-D cuvées are predominantly Pinot Noir Premier Cru and have aged for several years in the cellar, so their aromatic palette is very broad and complex.
